The waitress' name is Nicky Potnick. In th high school reunion episode Frank took her name tag, which is why is was missing from the sign in table when she arrived. (Or at least thats a theory)

personally i think the waitress’ name is mary, elizabeth, or some variation thereupon!! she’s been around since s1, when more often than not the characters were named after their actors
