Ingredients: 2 cups dried black beans, rinsed and soaked overnight. 1 onion, finely chopped. 4 cloves garlic, minced. 1 green bell pepper, diced. 1 red bell pepper, diced. 1 jalapeo, seeded and minced. 1 tablespoon olive oil. 1 teaspoon ground cumin. 1 teaspoon smoked paprika. 1 teaspoon dried oregano. 1 bay leaf. 4 cups vegetable broth. Salt and pepper to taste. Fresh cilantro, chopped, for garnish.
Instructions: Warm up the olive oil in a big pot on medium heat. Add the minced jalapeo, diced green and red bell peppers, chopped onions, and minced garlic. Saut the vegetables until they become tender. Add the bay leaf, dried oregano, smoked paprika, ground cumin, and soaked black beans. To coat the beans in spices, thoroughly mix. After adding the vegetable broth, heat the mixture until it boils. Once the beans are soft, reduce heat to low, cover, and simmer for one and a half to two hours. To taste, add salt and pepper for seasoning. Take out the bay leaf. Garnish the restaurant-style black beans with freshly chopped cilantro and serve them over rice.
