First salsa batch of the year! Tomatoes, peppers and garlic are put into the oven for 20-30 minutes, to intensify the flavour, then they're mixed with basil, vinegar, salt, whatever other spices, and slightly blended, so they're in small pieces. Then the sauce is cooked for a long time to get that savory flavour you can only get by lenghty cooking. It turned out absolutely delicious, can't wait to eat this in winter.
