Okay so it’s not as pretty or roasted as I thought it would be but it tastes delicious and it’s moist. Next time, I would probably brown it better or cook it for less time and then roast it in the oven for 5 minutes so the skin is crispy. What I did instead was actually made it into hainanese chicken! Lol I cut up the chicken and took the skin off. Made the garlic ginger sauce and served it that way. It was perfect. The kids ate up all the white meat without the ginger sauce so it definitely was tasty enough in its own. It took all of 18 minutes in the instant pot for a 3 lb chicken.
