i would say that jet and zuko are mirroring each other because they have the same intention and both want to leave their past behind and the scar is the only big difference between them. it's a symbol (for us) that zuko is a firebender and what the boys seperates and in the end they can't let go of the past and the firebending thing stands between them.
To elaborate on your point, as you kind of already implied, this ties into the Jet-Zuko parallelism we see throughout the remainder of the season. Both characters think that they can just leave their past behind but, as we find out later, it’s not that easy.
In “City of Walls and Secrets,” and “Lake Laogai,” we see the cost of Jet’s obsession--and, in the finale, we see that Zuko too finds it difficult to let go of his past.
There is, however, one very important difference which I casually mentioned a while back: Jet allows his obsession to consume him, and it’s what leads to his death. Zuko, however, was able to let go of his obsession under Lake Laogai, even if the consequences of his actions were (for the time) short lived. Still, the fact remains that Zuko lived, while Jet died.
