Corny Salmon Bubbies!
Can you tell what day it is? FRIDAY FUSHDAY! Citrus and a plump cut of fish never fails to satisfy this hot little ticket did the trick last Friday. It’s chili salmon with corn and pepper salsa.
LOOK AT ALL THAT SALSA! I baked the fish in little tin foil packets with the rub smeared all over the salmon bubbies. Why did I bake it? I find it easier, healthier and all the flavours and held tight inside the foil package – until you release it on to the plate and your nose his hit with heaven!
What’s the orange magotty things? That was my attempt to make thin little sweet potato fries, but from shaking them up from time to time they got bashed into tiny bits. They’re flavoured with smoked paprika (which I will put on everything if I’m not stopped) and they tasted brilliant.
This was a punchy healthful little number that kicked off the weekend funkin’ gooood! Oh yeah I chose Mudhouse Sauvingnon Blanc to go with this - and we both didn’t really like it but drank it anyway, mudhouse is mudhouse after all.
I’m not even going to proof read this for mistakes or ever read it again my whole life - that’s my choice.
