Avocado pesto pasta 🤤🥑 I modified a bit a recipe I found at @zainspiruj_sie_zyciem blog. The great thing about this recipe is that you can easily adjust it to make it exactly how you want it! • 1 portion of pasta (I used 45g Dalla Costa quinoa penne) • fresh basil • 1/2 big avocado • lemon juice (I squeezed in about 1/3 of lemon and I feel it was too much, I'll use less next time) • olive oil (I used 3/4 tbsp) • salt, pepper • garlic clove (the one I used was BIG, but I looove garlic!) • nuts (I used Tesco "chia & flax seed sprinkles" - there's at least 5 different seeds in it) . Mix well (or use a blender, I just smushed them using a fork, because can't be bothered to wash the blender) avocado, olive oil, lemon juice, salt, pepper and garlic. Add cooked pasta and add the nuts.
