Here's my #meatlessmonday recipe from #FiveSeasonsintheKitchen ! -Stuffed mushrooms with macadamia nut cheese Serves: 4 Ingredients 12 large champignons or King #Oystermushrooms #Macadamia nut cheese 2 cups macadamia nuts 6 #sun-driedtomatoes ½ cup #basil leaves 4 cloves garlic ¼ cup olive oil 1 tsp coarse Atlantic sea salt Pinch ground black pepper Directions Preheat oven to 180 deg C. Gently rinse mushrooms in cold water. Discard stems, leaving a cavity for stuffing. Process nuts and remaining ingredients in a food processor until creamy. Stuff mushrooms and arrange on a baking pan lined with parchment paper. Bake for 20 minutes.
