Ingredients: 1 gluten-free pie crust store-bought or homemade. 3 ripe plums, sliced. 2 ripe peaches, sliced. 1/4 cup almond flour. 2 tablespoons honey or maple syrup. 1 tablespoon cornstarch or tapioca starch. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1 egg, beaten for egg wash.
Instructions: Before you start cooking, heat the oven to 375F 190C. Sliced peaches and plums, almond flour, honey or maple syrup, cornstarch or tapioca starch, vanilla extract, ground cinnamon, and salt should all be mixed together well in a bowl. On a baking sheet lined with parchment paper, roll out the gluten-free pie crust. Cover the pie crust with the plum and peach mixture, leaving about 2 inches of space around the edges. Carefully fold the edges of the pie crust over the filling, making pleats if needed. Brush the galette's edges with the egg wash to make them golden. After the oven is hot, bake the pie for 25 to 30 minutes, or until the crust is golden brown and the filling is bubbly. Let it cool down a bit before cutting it up and serving it.
