These pinwheels are a delicious and fancy way to serve a special dinner. They are made with tender flank steak filled with savory spinach and gooey mozzarella cheese.
Ingredients: 2 beef flank steaks. Salt and pepper to taste. 1 cup chopped spinach. 1/2 cup shredded mozzarella cheese. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/2 teaspoon red pepper flakes. Toothpicks.
Instructions: Preheat oven to 375F 190C. Using a meat mallet, pound the flank steaks until they are about 1/4 inch thick. Season both sides of the steaks with salt and pepper. In a small bowl, mix together chopped spinach, mozzarella cheese, minced garlic, dried oregano, dried basil, and red pepper flakes. Spread the spinach mixture evenly over each steak. Starting from one end, tightly roll up each steak into a pinwheel shape. Secure the pinwheels with toothpicks to hold them together. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pinwheels in the skillet until browned on all sides, about 2 minutes per side. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the steak is cooked to your desired doneness. Remove the pinwheels from the oven and let them rest for a few minutes before serving. Slice the pinwheels into rounds and serve hot.
