While I know that might seem a bit dramatic, please, PLEASE tell me when a better time to be dramatic would be??? Let's see: jobless, hungry, can't breathe, and no energy. I jumped into my drama pants faster than Sopia Grace and Rosie can bust a song on Ellen.
Thankfully!, Eric came home from school + helped me find some energy, and off to the store we went. Mini flatbread pizzas for everyone!
I wanted veggies gallor + fish, Eric wanted ham and cheese. And while I just HAD to make his ham and cheese pizza just a bit fancier, I still let him have his way. His and hers. The solution to all your relationship woes.

Ham & Cheese Mini Flatbread Pizza (print recipe)
Serves one - Prep Time: 5 minutes - Cook Time: 12 minutes
What You'll Need:
One pita
Two slices, deli ham, roughly chopped
4-5 thinly sliced jalapeno pieces
1/4 cup cherry tomatoes, halved
1/4 cup Sharp cheddar cheese, roughly chopped
1/4 cup Mozzarella, sliced into thin circles
1 tbsp. shredded Parmesan cheese
1/4 cup fresh arugula
Juice from 1/2 lemon
1 tsp. garlic salt
1 tsp. each salt & pepper
Preheat oven to 375 degrees.
Begin by layering the deli ham, jalapeno, tomatoes, cheddar cheese and parmesan cheese on top of pita.
Evenly sprinkle lemon juice + and seasonings on top of pita.
Top off with thin slices of mozzarella.
