Ingredients: 1 pack kelp noodles. 2 tablespoons sesame oil. 2 tablespoons soy sauce or tamari for gluten-free. 1 tablespoon rice vinegar. 1 tablespoon sesame seeds. 1 teaspoon grated ginger. 1 clove garlic, minced. 1 tablespoon chopped green onions. 1 tablespoon chopped cilantro optional. 1 teaspoon erythritol or your preferred keto-friendly sweetener optional. Salt and pepper to taste.
Instructions: Rinse the kelp noodles thoroughly under cold water and drain well. In a small bowl, mix together sesame oil, soy sauce or tamari, rice vinegar, grated ginger, minced garlic, and erythritol if using. In a skillet over medium heat, lightly toast the sesame seeds until golden brown, stirring frequently to prevent burning. Remove from heat and set aside. Add the rinsed kelp noodles to the skillet and stir-fry for 2-3 minutes until heated through. Pour the sauce over the noodles in the skillet and toss to coat evenly. Cook for another 1-2 minutes. Remove from heat and sprinkle with toasted sesame seeds, chopped green onions, and cilantro if using. Season with salt and pepper to taste. Serve hot or cold as desired.
