This Cherry Tomato Focaccia is a tasty and simple bread that's great for a quick snack or starter. The garlic, basil, and sweet cherry tomatoes burst with flavor on top of the fluffy focaccia.
Ingredients: 2 cups all-purpose flour. 1 packet 2 1/4 tsp active dry yeast. 1 cup warm water. 2 tbsp olive oil. 1 tsp sugar. 1 tsp salt. 1 cup cherry tomatoes, halved. 2 cloves garlic, minced. 2 tbsp fresh basil, chopped. Salt and pepper to taste. Extra olive oil for drizzling.
Instructions: Warm water, sugar, and yeast should all be mixed together in a bowl. Wait five minutes until it foams up. Mix the yeast with the flour, olive oil, and salt. Work the dough around until it gets soft. In a warm place, cover the dough and let it rise for an hour. Set the oven to 425F 220C and heat it up. Press the dough down and put it in a baking pan that has been greased. Even it out by pressing it. Put the cherry tomatoes that have been cut in half on top of the dough. Mix together fresh basil, salt, and pepper, and then sprinkle them on top of the tomatoes. Spread olive oil all over the focaccia. Put it in the oven and bake for 20 to 25 minutes, or until it's crisp and golden brown. Let it cool a bit after taking it out of the oven, then cut it up. Warm up and serve.
