Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 cups granulated sugar. 3/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1 1/2 tsp baking soda. 1 tsp salt. 2 large eggs. 1 cup whole milk. 1/2 cup vegetable oil. 2 tsp vanilla extract. 1 cup boiling water. 1 cup unsalted butter, softened. 2 cups confectioners' sugar. 1 tsp vanilla extract. 4 large egg whites. 1/4 tsp cream of tartar. 1/2 cup granulated sugar. 1/2 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C. Line a muffin tin with cupcake liners. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, vegetable oil, and 2 tsp of vanilla extract to the dry ingredients. Mix until well combined. Pour in the boiling water and mix until the batter is smooth. It will be thin, but that's okay. Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Remove cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely. In a separate bowl, beat the softened butter until creamy. Gradually add in the confectioners' sugar and 1 tsp of vanilla extract, beating until smooth and fluffy. Set aside. In a clean, dry mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add 1/2 cup of granulated sugar while continuing to beat. Beat until stiff, glossy peaks form. Add 1/2 tsp of vanilla extract and mix until combined. Transfer the marshmallow meringue frosting to a piping bag fitted with your desired tip. Pipe the frosting onto the cooled cupcakes.
