Ingredients: 2 lbs boneless chicken breast, cut into 1-inch cubes. 1 red bell pepper, cut into chunks. 1 green bell pepper, cut into chunks. 1 red onion, cut into chunks. 8-10 wooden skewers, soaked in water for 30 minutes. 1/4 cup olive oil. 2 cloves garlic, minced. 1 tsp paprika. 1 tsp cumin. 1/2 tsp salt. 1/2 tsp black pepper. 1/4 cup fresh lemon juice. Fresh parsley for garnish.
Instructions: In a bowl, mix olive oil, garlic, paprika, cumin, salt, black pepper, and lemon juice to make the marinade. Thread the chicken, bell peppers, and red onion onto the soaked wooden skewers, alternating between them. Place the skewers in a shallow dish and pour the marinade over them.
