Trying Jin Jun Mei with strawberries on the side. The chocolate and sweet tones of the Jin Jun Mei goes well with the sweet fruitiness of the strawberries. I still need to work out some kinks, as some of the strawberries are a little too tart this early in the year and some infusions dont hold up well with the "loud" tastingvolume of the berries. So lange sips of tea with small bites of strawberries.

I usually like this tea sweeter, so usually I start with 90 °C water instead of 100. This time I started with higher temperature, a little more tea in ratio with the water to bring up the taste volume and a short steep to stop the tea from becomjng to bitter. The first two infusions were good, I sometimes felt I was eating strawberries with pure chocolate. The bitterness of the tea fell away and some of the tartness of the berries disappeared making it more sweeter. Definitely worth a try!
