This ground beef and broccoli dish made in a slow cooker is easy, tasty, and low in carbs. It's great for busy days. It's an easy way to make a healthy and filling dinner because you don't have to do much prep work.
Ingredients: 1 lb ground beef. 1 head broccoli, chopped. 1 onion, diced. 2 cloves garlic, minced. 1 cup beef broth. 2 tbsp soy sauce or tamari gluten-free. 1 tbsp olive oil. Salt and pepper to taste.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Add the minced garlic and diced onion and saut until the garlic smells good. Put the ground beef in the pan and cook it until it turns brown. Add pepper and salt. Move the ground beef mixture that has been cooked to the slow cooker. Chop up some broccoli and put it in the slow cooker. Add soy sauce and beef broth to the broccoli and beef. Mix everything together by stirring. Put the lid on top and cook on low for 4 to 6 hours or high for 2 to 3 hours, until the broccoli is soft and the flavors are well mixed. If you need to, change the seasonings before serving.
