Sev Usad poha, don’t know how it came into being or who invented it. No real origin story that can be traced back on how these two things ended up in one plate. All i know is that it is pretty fantastic. We affectionately call it “Jinno” while the board reads “Jai Mataji Sev Usad” When you end up there you would find him standing in the back almost constantly chopping green onions all day without fail, something he generously dishes out with every serving of what you would place an order for is “Ek plate Pauva”. The usad in which I never find any peas, but still thick from the gram flour that we speculate he adds in give a delicious body to the spicy broth which would probably make an insane base for a mazeman. There is a small stack of accoutrements that are laid out as the cruet on the table. A tari, two different spices which Jinno would not reveal the identity too, salt and vinegar diluted with water to tang it up a bit. The usad like any place is free unlimited refills. An extra plate of sev on stand by and you are ready to roll. There is a rhythm and balance to it, you need to figure out your taste preference and then work over how much of each cruet’s content shall be emptied in, you go in for a few bites and when the poha to usad ratio is skewed you add in more usad, then the spooning and shaking of the various things that are laid out and the singular plate keeps on becoming more complex and so you have to make sure you plan ahead as to not overwhelm the palette, and like a beautiful symphony reach a crescendo and then fall.
