*Street Food Safari: Exploring India's Hidden Gems, One Bite at a Time*
*1. The Delhi Rule: Follow the line of uncles*
If you see 15 middle-aged men in office shirts standing around a cart at 4pm, join them. They know. *Eat this*: Chole Bhature at Sita Ram Diwan Chand in Paharganj. Fried bread the size of your face, chickpeas that stain your fingers orange. It’s $1.50 and you’ll think about it for years. Go before 11am or they run out. *Pro tip*: Delhi Belly is real. Don’t drink the water. Don’t eat the chutney if it’s sitting in an open bucket. If it’s hot and fresh from the pan, you’re usually safe.
*2. Mumbai: Where breakfast is a religion*
Skip the fancy cafes. Stand on the street. *Eat this*: Vada Pav at Anand Stall outside Mithibai College. It’s a spicy potato fritter smashed in a bun with garlic chutney. Costs 20 rupees. It’s called the “Indian burger” and it’s better. Eat 2. *Also get*: Cutting chai in a tiny glass. Sweet, milky, 10 rupees. You drink it in 3 sips and order another. The guy has been there 30 years. He’ll judge you if you add sugar. *Rule*: In Mumbai, if the cart has a long line and the guy is sweating into the food, it’s probably amazing and you’re taking a chance. Your call.
*3. Kolkata: The city that deep fries everything*
Rolls, puchkas, telebhaja. If it’s not fried, is it even food? *Eat this*: Kathi Rolls at Kusum Rolls on Park Street. Flaky paratha wrapped around egg, chicken, onions, mystery sauce. Eat it standing up, grease dripping down your arm. You’ll ruin your shirt. Worth it. *And this*: Puchka. It’s pani puri but better. The vendor hits your leaf plate with tamarind water and it explodes in your mouth. Don’t ask what’s in the water. Just eat 6 and run. *Tip*: Kolkata loves mustard oil. If your stomach is sensitive, go easy day 1.
*4. South India: Breakfast for dinner is normal*
Dosas, idlis, filter coffee. It’s cheap, fast, and you can eat it with one hand. *Eat this*: Masala Dosa at Vidyarthi Bhavan in Bangalore. Line starts at 6:30am. You wait 45 minutes. You get a dosa bigger than the table, crispy, with potato inside, and coconut chutney. They flip you the bill before you finish. That’s how they keep the line moving. *In Chennai*: Try Murukku Sandwich. Yes, that’s a thing. Crunchy fried spirals in white bread with chutney. Sounds wrong. Tastes like childhood. *Rule*: Eat with your right hand only. Left hand is for other things. Watch locals and copy them.
*5. The Amritsar move: Eat at the Golden Temple* Not street food, but it’s the best meal in India and it’s free. The langar feeds 100,000 people a day. You sit on the floor with everyone. Dal, roti, kheer. Volunteers cook it all day. You wash your own metal plate after. It’s humbling and delicious. *Then go outside*: Amritsari Kulcha. Stuffed bread slathered in butter, cooked in a tandoor. Dip it in chole. Finish with lassi so thick your spoon stands up. You will nap after.
*6. How to not get sick, from someone who learned the hard way* I spent 24 hours in a Delhi bathroom in 2018. Don’t be me. *My rules now*: - *Hot, cooked, peelable*. If it’s piping hot from the fryer or tandoor, eat it. If it’s fruit you peel yourself, eat it. If it’s salad or cold chutney, skip it. - *Turnover is king*. Crowded stall means food doesn’t sit. Empty stall means that samosa has been there since Tuesday. - *Bottled water only*. Check the seal. Or drink chai. It’s boiled. It’s safe. - *Carry Imodium and electrolytes*. Not being dramatic. Just being prepared. - *Start slow*. Don’t do street goat curry day 1. Work up to it. Samosa day 1. Golgappa day 3. Mystery meat day 7.
*7. The order that matters* Don’t eat pani puri first. You’ll fill up on water and regret it. *My sequence*: Start with fried stuff like samosa or kachori. Then breads like kulcha or dosa. Then the messy stuff like rolls. Finish with sweet. Jalebi dripping in syrup. Gulab jamun hot from the oil. You end on sugar so you forget the pain you’re about to feel.
*8. You need these words* “Kitna hua?” = How much is it? “Thoda teekha” = A little spicy. Lie. It will still be very spicy. “Ek aur” = One more. You will use this a lot. “Bhaiya” = Brother. Use it for every vendor. They’ll like you more.
*9. The stuff nobody tells you* - Carry cash. Small bills. Nobody has change for 500 rupees. - Carry tissues. Napkins don’t exist. - Don’t eat near garbage piles. Seems obvious. You’ll see it. - If a place is famous on Instagram, there’s a better one 2 stalls down with no line.
*Cities to plan a trip around food*: *Lucknow*: Kebabs that melt. Tunday Kababi. *Hyderabad*: Biryani at 2am. Paradise is overrated, go to Shadab. *Ahmedabad*: Manek Chowk at night turns into a dessert market. Ice cream sandwiches. *Jaipur*: Pyaaz kachori and lassi in a clay cup you smash when you’re done.
*Best bite I’ve ever had*: Momos in Dharamshala. Steamed, pork, with the chili oil that numbs your mouth. Ate 20 in the rain. Got altitude sickness later. Still worth it.
