Apollo falling in love with a magician because he admires the her intelligence and the way she has a willingness to learn more and how, if the Spell or smth she needs doesn't exist, or is inaccessible for whatever reason, she'll invent another one for that purpose, to make that spell accessible. Her passion, her devotion, her intelligence - everything.
On a completely unrelated note, all of Apollo's children have varying abilities of emotion magic because the arts (music, dancing, poetry, story-writing, singing, painting, sketching, etc) are all forms of expressing emotions, so it's literally built-in for them.
