The fun you can have with Force sensitive Din (without breaking canon too much).
So, the attack on Aq Vetina happens in 19BBY. Death Watch saves young Din Djarin and brings him back to Mandalore. Here, he will wait in an orphanage until adopted by a clan (or, as happens in canon, The Children of the Watch).
HOWMEVER
19BBY puts us right at the end of the Clone Wars. Which means that there is a very good chance that the Mand’alor is a certain Dark Side megalomaniac who just so happens to be obsessed with finding an apprentice. You know the second that little boy touches down on Mandalorian soil, Maul feels his presence and “adopts” him.
The Siege of Mandalore probably goes down the same, except we’ll say Din and Maul make it out together (we can drastically break canon and keep Maul on the throne which is its own bundle of fun but we’ll save that for later). Of course, Ashoka wouldn’t let him just walk away with a Force sensitive child but uh…there was a lot of confusion during Order 66. It happens. It works. Ish.
The whole point is that Din gets training in the Dark Side of the Force but not exactly in the ways of the Sith, which Maul has abandoned at this point. Sort of. So we get my personal favorite variation of “Sith” Din, who is not hungry to rule the galaxy (yawn, overdone) but very much into amassing enough power to get what he wants.
Dark Din is the most fun when he’s pretty much the same as regular Din, IMO, just selfish. In the case where he and Maul go on the run he’s not a Mandalorian. But he’s just as deadly and I could see him turning to bounty hunting. Especially once he gets older and he and Maul have a falling out (IIRC Maul spends some time running the Black Sun Syndicate?).
Maul is unlikely to be as eager to hunt Ezra down in this scenario but they’d probably end up on Malachor for the weapon anyway. And that business with the holocron gives us just enough of a clue to lead us back to Tatooine, to Kenobi.
And you know who else is nearby on Tatooine? 👀

"Tython changed something in him. It's as if something awakened, something otherworldly."
Din Djarin firmly intends to ignore the way his instincts are faster and clearer than they ever were before. But now that he has Imperial remnants on his tail, who are again determined to take Grogu from him, that may not be a choice.
