They didn't make her middle eastern she's part of 1001 Arabian nights and the burka is only a symbol of practicing Muslim women so if they never showed her praying or anything then covering her up would have been pointless like my family is middle eastern and my mum always tells me that clothing wise no one really cared in most parts until more recently
Granted, Wikipedia is not the most legitimate source, but this is what I found when looking for Aladdin's/Jasmine's origins:
"Although Aladdin is a Middle Eastern tale, the story is set in China, and Aladdin is explicitly Chinese."

"In the animated version of "Aladdin" made by Disney, her name was changed to Jasmine and she was made an Arabian princess."
Her father definitely makes allusions to him being a Muslim, and so it follows that she would be one as well. At least pertaining to a hijab, to my knowledge, when it reached the populations, it was a symbol of status/prestige. (Working women did not have to wear hijabs - if you wore one, you were wealthy.) It digressed by the twelfth century to be more common for women to wear it in public places. So, either way, unless it was set really early on, it's more likely than not she would be covering up in some way.
Even if she was not a practicing Muslim, I can see no justification as to why her costume is significantly more revealing than any other princess's outfit beyond the fact they wanted to play on stereotypes of "exotic women being more seductive."
