Ingredients: 250g corkscrew pasta. 4 ripe tomatoes, chopped. 1/2 cup fresh basil leaves. 3 cloves garlic, minced. 1/4 cup grated Parmesan cheese. 1/4 cup pine nuts. 1/4 cup extra virgin olive oil. Salt and pepper to taste.
Instructions: Follow the directions on the package to cook the corkscrew pasta until it is al dente. Remove the water and set it aside. To make the sauce, put chopped tomatoes, basil leaves, minced garlic, grated Parmesan cheese, pine nuts, and extra virgin olive oil in a food processor. Pulse until it's smooth. Add salt and pepper to taste to the tomato pesto. Toss the cooked pasta with the Sicilian tomato pesto in a large bowl until it is well covered. If you want, you can serve it hot with extra Parmesan cheese and basil leaves on top.
