Chocolate/Peanut Butter Freezer Fudge
Ingredients:
1/2 cup peanut butter
1/2 cup unsweetened vanilla almond milk
1 packet Nutrisystem NutriChocolates
Zero-calorie cooking spray
One ice cube tray or baking sheet
Directions:
Spray a small pot or sauce pan with zero-calorie cooking spray then bring to medium heat.

Vegan Vanilla Almond Freezer Fudge
*** When I first made this I liked it but I wasn't crazy about it. It loses its texture when out of the freezer too long and the almond butter flavor is really strong. But then it got pushed to the back of my freezer while I filled up on holiday goodies and when I found it again I was happily surprised. The vanilla flavor has really come through, giving the fudge a much more complex (but still pretty simple) flavor to it which was great. I'd recommend making enough of this fudge to freeze some for later (if you can avoid eating it that long!)
Freezer Fudge
My lovely friend Ruth E recently told me about this freezer fudge she had discovered, saying it would be a great addition to my blog. I was skeptical at first because I have never been the biggest fan of fudge, finding most fudge to be overly sweet and rich. This recipe has changed my views on fudge! The ingredients are much healthier than traditional fudge, the recipe is completely vegan, and it satisfies my sweet tooth without being too sweet!
Ingredients:
1/2 teaspoon vanilla
4 tablespoons cocoa
quarter cup of honey
3/4 cup coconut oil
1 cup peanut butter
pinch of salt (optional)
Directions:
Simply Dump, Microwave, Stir, and Freeze...or in detail:
1. Dump all the ingredients in a microwave safe bowl and microwave on high for 1 minute, or until the mixture is runny.
2. Stir all ingredients, pour into a freezable container, cover, and freeze until hard, about 2 hours. Note, the thickness of the fudge will depend on the container you choose for this step.
3. The hard block of fudge should easily slide out of the container. At this point it can be cut into squares and served. Make sure to store any extras in the freezer, but I don't think you'll have much left!
*I used chunky peanut butter for this recipe, which provided some crunch and texture to the fudge. For smoother fudge, use creamy peanut butter. If you have a peanut allergy, try almond butter or cashew butter!
