A few days ago I made grilled snapper and served it with a purée of white bean. I stole this idea from one of my fave local restaurants and only after searching recipes did I discover that this combo is a classic Provençal dish. Who knew? I don’t think I ever had it while there, though I did have Cassoulet that was decadently delicious in Carcassonne. Have you been to the South of France? I wonder when I’ll be able to visit again.
