When you wrap warm tortillas around crispy fried fish, fresh vegetables, and tangy toppings, you have Baja Fish Tacos. This recipe brings the flavors of Baja California to your kitchen. It's great for a casual meal or a party.

Ingredients: 1 lb white fish fillets such as cod or tilapia. 1 cup all-purpose flour. 1 teaspoon chili powder. 1 teaspoon garlic powder. 1 teaspoon cumin. Salt and pepper to taste. 1 cup beer light Mexican beer recommended. Vegetable oil for frying. 8 small flour or corn tortillas. 1 cup shredded cabbage. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. 1/4 cup sour cream. 1 lime, cut into wedges.

Instructions: The fish fillets should be cut into strips. Blend flour, garlic powder, cumin, salt, and pepper in a bowl that is not too deep. Slowly whisk in the beer until you have a smooth batter. Warm up the oil in a big pan over medium-high heat. Let the extra batter drip off the fish strips as you dip them in it, and then fry them for about 34 minutes on each side, until they are golden and crispy. Put paper towels down to dry. You can warm tortillas up in the microwave or a dry pan. Cooked fish strips, cabbage shreds, tomato dices, and cilantro are put inside tortillas. Put sour cream on top and serve with lime wedges.
