Omelette alla Caprese is a delightful Italian-inspired omelette featuring the classic Caprese flavors of tomatoes, mozzarella cheese, and fresh basil. It's a quick and easy breakfast or brunch option that bursts with Mediterranean freshness and taste.
Ingredients: 2 large eggs. 1/4 cup diced tomatoes. 1/4 cup fresh mozzarella cheese, diced. 2 tablespoons fresh basil leaves, chopped. Salt and pepper to taste. 1 tablespoon olive oil.
Instructions: Put the eggs in a bowl and beat them with a fork until they are well mixed. In a nonstick skillet over medium heat, heat the olive oil. Put in the chopped tomatoes and cook for two to three minutes, until they start to get soft. Add the eggs that have been beaten to the tomatoes in the pan. On top of the eggs, spread out the diced mozzarella and chopped basil. Add pepper and salt to taste. Two to three minutes of cooking will do it. The edges will begin to set. With a spatula, gently lift the edges of the omelette and tilt the pan so that the raw eggs can flow to the edges. Keep cooking for another two to three minutes, until the omelette is mostly set but still has a little runny top. With the spatula, fold the omelette in half. Cook for one more minute to melt the cheese and finish the eggs. Place the omelette on a plate and, if you want, top it with more fresh basil. Enjoy while hot!
