Ingredients: 2 cups mixed vegetables e.g., bell peppers, zucchini, cherry tomatoes. 2 cups mixed fruit e.g., pineapple, apple, grapes. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup chopped fresh cilantro. 2 cloves garlic, minced. 2 tablespoons lime juice. 2 tablespoons honey or maple syrup. 1 teaspoon Dijon mustard.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the fruit and vegetables to a large bowl and toss them with olive oil, salt, and pepper. Evenly spread the mix out on a baking sheet that has been lined with parchment paper. Put the vegetables in an oven that has already been heated and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. Cut up some garlic and mix it with lime juice, honey or maple syrup, and Dijon mustard in a small bowl. This will make the sauce. Move the roasted fruit and vegetables to a serving platter when they are done. Pour the garlic lime sauce over the fruit and vegetables that have been roasted. Add chopped cilantro on top to make it look nice. Whether it's warm or cold, serve the salad.
