This watermelon turtle charcuterie platter is delicious and refreshing, and it's perfect for summer parties. It has the sweetness of watermelon mixed with different fruits, nuts, and savory charcuterie. Honey is drizzled on top to add an extra burst of flavor.
Ingredients: 1 small seedless watermelon. 1/2 cup blueberries. 1/2 cup strawberries, sliced. 1/2 cup blackberries. 1/2 cup grapes. 1/4 cup kiwi, sliced. 1/4 cup raspberries. 1/4 cup almonds, toasted. 1/4 cup prosciutto, thinly sliced. 1/4 cup salami, thinly sliced. 1/4 cup brie cheese, cubed. 1/4 cup cheddar cheese, cubed. 1/4 cup goat cheese, crumbled. 1/4 cup honey. Fresh mint leaves for garnish.
Instructions: Along the length of the fruit, cut the watermelon in half. Scoop out the flesh, leaving a shell that is about an inch thick. Cut the watermelon flesh into small pieces that you can easily eat. Put the blueberries, strawberries, blackberries, grapes, kiwi, and raspberries in a different bowl and mix them together. Put the watermelon pieces that you cut up back into the watermelon shell. Spread the mixed nuts, cheese, prosciutto, salami, and berries on top of the watermelon. Spread honey over the whole arrangement of charcuterie. Add some fresh mint leaves as a garnish. Serve right away and enjoy!
