These paleo and gluten-free peach muffins are a guilt-free treat. Made with almond and coconut flour, sweetened with honey, and loaded with fresh peaches, they are perfect for a clean eating lifestyle.
Ingredients: 2 cups almond flour. 1 teaspoon baking soda. 1/4 teaspoon salt. 2 eggs. 1/4 cup honey. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1 cup ripe peaches, diced. 1/4 cup unsweetened almond milk. 1/4 cup coconut flour. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon cardamom. 1/4 teaspoon ginger.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a large mixing bowl, combine almond flour, coconut flour, baking soda, salt, cinnamon, nutmeg, cardamom, and ginger. In a separate bowl, whisk together eggs, honey, melted coconut oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until well combined. Add diced peaches and almond milk to the batter, and gently fold them in. Spoon the batter into the muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into a muffin comes out clean.
