Cooking From Scratch: Fried Corn Meal Mush, or Polenta if You Insist
Fried Polenta Eyeballs with Saffron Veins for #TapasTuesday
What You Need:
precooked polenta tube (you could make you own polenta here and form it into flat circle yourself but I think the tubes are just a lot easier)
or flat crackers (if you want to make this recipe SUPER easy!)
herbed goat cheese spread
sliced black olives
saffron shreds
What You Do:
Preheat a skillet with a little bit of oil over medium heat. Slice your polenta tube into 1/2 inch circles and carefully set hem in. Heat for a couple minutes and carefully flip and brown on both sides.
Move polenta slices to plate with paper towel to remove excess oil. Season if polenta is not already spiced (honestly, simple salt and pepper is great).
Spread goat cheese over polenta slices, and press olive slice into the center.
Sprinkle saffron shreds like veins and serve!
