If I ever order appetizers at a restaurant, it’s fried pickles 99% of the time. We all know that anything fried at a restaurant isn’t made with keto-friendly ingredients. The good news is that there is a way to fry pickles with low carb ingredients. If you’re on the keto train, these babies can actually be brought to life with ingredients you more than likely already have in your pantry.
INGREDIENTS
1 jar of sliced pickles (the recipe will make about 1/3-1/2 of the jar)
Begin to heat oil in a pan at very low heat. Trust me on this one.
Mix the dry ingredients in either a bowl or large plate.
Whisk the two eggs in a small bowl.
Dip the pickles in eggs and remove excess egg.
Place the pickles in the batter and turn them so that they are covered in the mix.
When pan is hot enough fry pickles until light brown and then turn over.
Remove pickles as the finish frying, waiting a few minutes before serving.
Add additional coconut oil as needed. The pickles will definitely soak up a lot of the oil.
