Ginger Fried Rice is a quick and flavorful dish that combines the warmth of ginger with the savory goodness of fried rice. It's a perfect way to use up leftover rice and create a delicious meal in minutes.
Ingredients: 2 cups cooked rice. 2 eggs, beaten. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 1/2 cup frozen peas and carrots, thawed. 2 green onions, chopped. 2 tablespoons soy sauce. Salt and pepper to taste.
Instructions: Put vegetable oil in a big pan or wok and heat it over medium-high heat. Put in the minced garlic and ginger. Saut for one to two minutes, until the smell is nice. Stir the eggs together and pour them into the pan from the other side. Move the garlic and ginger to one side. Make sure the eggs are fully cooked. Put the carrots and peas that have been thawed into the pan and stir-fry for another two to three minutes. Add the soy sauce and cooked rice and mix well. Stirring all the time, cook for three to four more minutes. Add pepper and salt to taste, and then mix in the chopped green onions. Take it off the heat and serve it hot. If you want, add more green onions as a garnish.
