These honeydew cucumber margarita popsicles are a great way to cool off. They taste great with a little tequila, sweet honeydew, crisp cucumber, and a hint of lime. They're great for hot summer days or whenever you want a frozen treat with a twist.
Ingredients: 2 cups honeydew melon, chopped. 1 cup cucumber, peeled and chopped. 1/4 cup fresh lime juice. 1/4 cup tequila. 2 tablespoons honey or agave syrup. 1 tablespoon triple sec or orange liqueur. Zest of 1 lime. Pinch of salt.
Instructions: Honeydew melon, cucumber, lime juice, tequila, honey or agave syrup, triple sec, lime zest, and salt should all be put into a blender. Mix until it's smooth. Place the mix into popsicle molds. Place a popsicle stick in each mold. Put it in the freezer for at least six hours, or until it's solid. To take the popsicles out of the molds, run warm water over them for a short time. Serve and have fun!
