A university biology class where an alien/magical professor conducts live demonstrations of certain concepts by transforming the students.
* Teaching methods of pasteurization and animal husbandry through the making of a thick leaky hucow
* Gifting a thin student a thick giggly layer blubber to exemplify its buoyant and heat maintaining properties
* Transforming friend groups as some frogs and fish change their gender if there is too much of an imbalance in their population.

This is the best future, I can probably imagine it's a person who just really wants to transform people but there's no like, direct way to make money from it, so in exchange for teaching biology on the final frontier they get to experiment on beings.
Now the university has given them permission to test on students, heck even offer extra credit, but it has to be somewhat safe and 90% reversible in less then 6 months. The professor then goes "oh yeah totally, you know what I'll do you one better" and reveals the magic semi truck full of their lab equipment from back when they were considered a mad scientist.
So now the class gets to experience all the fun of different transformation once a week to fully get the biology of the animals that followed them into space, and perhaps, any they find on new frontier.
Like on your cow thing just a random assortment of hucow/cow people serums. Some people turn into your standard hucow with a big chest (boobs or just pecs) and some horns and tail and other mild stuff, while others go full anthro cow and got the full fur and horns and some even got udders along side their chest udders. Bonus points if that it's so random that some people even change genders after taking the serum!
Oh a field trip to an icey planet where the professor finally gets to test the various forms to preserve heat. You got people turning into seals, polar bears, penguins, and as you said, gain blubber. now everyone's ready for a adventure thru the icey plains!
and of course no biology class can be finished with out a journey into the vast ecosystems of water. A jump into a swamp with frog legs, or a splash into a ocean with gills and scales.
now with all this the effects are very reversible, probably takes a day or two for it to fully go back with the cure. But the professor is at no liability for what the students do after class with their new bodies. It's not their fault the students wanted to see how much milk them could make, or what happens when two frog people go at it for 2 days. They simply teach the class!
