My crazy #cookingexperiment worked! Chicken stuffed with #quadrellodibufala and #keisarinna and breaded with sourdough, smoked almonds, thyme, yellow mustard, garlic, pepper melange, and onions. I just tossed it together since I wanted to use the oh so decadent water buffalo Italian cheese I got in Madison at #fromagination and also wanted dinner, so surprisingly it worked! Also a side of salad because I have to at least pretend I eat healthy 😂 #cooking #dinner #cheesepairing

When in Wisconsin...

Went on an amazing trip to Madison today with my Advanced Culinary class (aka Pro Start). We started our day by going to Fromagination who have some of the best cheese in the state of Wisconson. We did a tasting of cheese and then I bought some raw honey witch is amazing. Then after snapping a few shots of the capital we were off to MATC. After spending some time in a cool little sitting area we when on a tour of the baking area and their very impressive kitchen. Then we sat down for a lunch made by the MATC students themselves. The meal consisted of a very tender veal marsala with sauteed oyster mushrooms, a beat and bean sprout salad, and polenta. For dessert a gourmet fudge cake with whipped cream and a dark chocolate covered truffle. The food and service was great at both places and I look forward to going again.
