If you liked the movie Frozen, these North Mountain Cupcakes are perfect for you. They make you think of the cold North Mountain with their beautiful blue color and snowy decor. They're a fun treat for a Frozen-themed party or just because you want something sweet.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. Blue food coloring. White frosting. Blue sprinkles. Silver edible glitter. Snowflake decorations optional.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the flour, baking powder, and salt together in a medium-sized bowl using a whisk. Put away. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Slowly add the dry ingredients to the wet mixture, mixing them in with the milk every so often. Start with the dry ingredients and end with the milk. Don't mix any further than that. Until the batter is the right shade of blue, like the North Mountain from Frozen, add a few drops of blue food coloring. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. On a wire rack, let the cupcakes cool all the way down. Put white frosting on the cupcakes after they are cool. For a snowy look, you can use a piping bag or a knife to spread it out. To make it look like ice crystals, sprinkle blue sprinkles on top of the frosting. Some silver edible glitter on top of your cupcakes will make them look beautiful. If you want to add an extra Frozen-inspired touch, you can decorate with snowflake decorations. Give your North Mountain Cupcakes to people and enjoy them!
