Carrots, apples, almond flour, coconut flour, and nuts are just a few of the healthful ingredients that go into these Paleo Morning Glory Muffins. They are the ideal grab-and-go breakfast or snack because they are naturally sweetened with maple syrup.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 2 teaspoons ground cinnamon. 1 teaspoon baking soda. 1/2 teaspoon sea salt. 3 large eggs. 1/4 cup coconut oil, melted. 1/3 cup pure maple syrup. 1 teaspoon vanilla extract. 1 cup grated carrots. 1/2 cup grated apple. 1/2 cup shredded coconut. 1/2 cup raisins or chopped dates. 1/2 cup chopped pecans or walnuts.
Instructions: Set the oven temperature to 175C 350F. Use parchment paper to line a muffin pan. Combine almond flour, coconut flour, baking soda, cinnamon, and sea salt in a sizable mixing bowl. Whisk eggs, melted coconut oil, maple syrup, and vanilla extract in a separate bowl. After adding the wet ingredients to the dry ingredients, thoroughly mix them together. Add the chopped pecans or walnuts, shredded coconut, grated carrots, grated apple, and raisins or chopped dates. About 3/4 of the way full, scoop the batter into each muffin tin that has been prepared. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean, in a preheated oven. After five minutes of cooling in the muffin tin, move the muffins to a wire rack to finish cooling. Present and savor!
