Ingredients: 1 cup almond milk. 2 tablespoons vegan butter. 1 packet active dry yeast. 3 cups all-purpose flour. 1/4 cup granulated sugar. 1/2 teaspoon salt. 2 medium apples, peeled, cored, and diced. 1/2 cup brown sugar. 1 teaspoon ground cinnamon. 1/4 cup vegan caramel sauce. 1/4 cup chopped pecans optional.
Instructions: In a small saucepan, heat almond milk and vegan butter until warm but not boiling. Remove from heat. Sprinkle yeast over the warm milk mixture and let it sit for 5 minutes until frothy. In a large mixing bowl, combine flour, granulated sugar, and salt. Pour in the yeast mixture and stir until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size. Preheat oven to 350F 175C and lightly grease a baking dish. Roll out the dough on a floured surface into a rectangle about 1/4 inch thick. Spread vegan caramel sauce over the dough, leaving a small border around the edges. Sprinkle diced apples, brown sugar, cinnamon, and chopped pecans evenly over the caramel sauce. Starting from one long edge, tightly roll up the dough into a log. Cut the log into 12 equal slices. Place the slices in the prepared baking dish, leaving a little space between each roll. Bake for 25-30 minutes, or until golden brown and cooked through. Allow the rolls to cool for a few minutes before serving. Drizzle with additional caramel sauce if desired. Enjoy!
