These fruitcake scones combine the flavors of traditional fruitcake with the flakiness of a scone for a delectable treat. They're ideal for breakfast, brunch, or an afternoon snack with a cup of tea or coffee.
Ingredients: 2 cups all-purpose flour. 1/3 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/2 cup cold unsalted butter, cubed. 1/2 cup dried mixed fruits raisins, cherries, apricots, etc.. 1/4 cup chopped nuts walnuts, pecans, or almonds. 1/2 cup milk. 1 large egg. 1 teaspoon vanilla extract.
Instructions: Warm your oven up to 400F 200C and put parchment paper on a baking sheet. Whisk the flour, sugar, baking powder, and salt together in a large bowl. Add the cold cubed butter to the dry ingredients. Cut the butter into the flour with a pastry cutter or your fingers until the mixture looks like big crumbs. Add the chopped nuts and dried mixed fruits and mix well. Mix the milk, egg, and vanilla extract in a different bowl using a whisk. Add the wet ingredients to the dry ones and mix them together until they are just mixed. Be careful not to mix too much. Place the dough on a floured surface and knead it a few times to bring it all together. Cut the dough into 8 wedges after rolling it into a circle that is 1 inch thick. Once the baking sheet is ready, put the scones on it. Bake them for 15 to 18 minutes, or until the tops are golden brown. Take the scones out of the oven and let them cool down a bit before you serve them. Have fun with your tasty fruitcake scones!
