Ingredients: 2 cups white chocolate chips. 1 can 14 ounces sweetened condensed milk. 1/4 cup unsalted butter. 1 teaspoon watermelon extract. Green food coloring. Red food coloring. Black food coloring for seeds. Green sprinkles optional.
Instructions: Line an 8x8 inch 20x20 cm square baking pan with parchment paper, leaving an overhang for easy removal later. In a microwave-safe bowl, combine the white chocolate chips, sweetened condensed milk, and butter. Heat in 30-second intervals, stirring each time until the mixture is smooth and well combined. Stir in the watermelon extract to give it that refreshing watermelon flavor. Divide the fudge mixture into two equal portions. Tint one portion with green food coloring to create the green rind and the other portion with red food coloring to make the pink watermelon flesh. Adjust the intensity of the colors to your preference. Drop spoonfuls of the red mixture into the prepared pan and spread it out evenly to create the pink layer. Next, add spoonfuls of the green mixture over the pink layer and spread it out to form the green rind. You can also add green sprinkles on top for a decorative touch if desired. To create the watermelon seed pattern, use black food coloring to make small dots on top of the green layer. Chill the fudge in the refrigerator for at least 2 hours or until it is firm and set.
