Ingredients: 8 rice paper wrappers. 2 cups mixed fresh fruits such as strawberries, mango, kiwi, and pineapple, thinly sliced. 1/4 cup fresh mint leaves. 1/4 cup chopped nuts such as almonds or cashews. 1/4 cup shredded coconut. 1/4 cup vegan yogurt or coconut yogurt, for dipping.
Instructions: Get a big bowl of warm water ready. For about 5 to 10 seconds, dip one rice paper wrapper into the water until it gets soft and bendable. When the wrapper is soft, lay it flat on a clean surface. Put some shredded coconut, mint leaves, sliced fruits, and nuts in the middle of the wrapper. To make a burrito, fold the sides of the wrapper over the filling and then roll it up tight. Do it again with the rest of the wrappers and filling. Vegan yogurt or coconut yogurt should be used to dip the spring rolls.
