So I used to have a babysitter from Belize and one day she gifted me with the deliciousness that are fry jacks and something kept nagging me tonight about how they were made and if I could make them and ITS SO EASY IM SO MAD I WENT 17 YEARS WITHOUT EATING THIS EVERY DAY FOR BREAKFAST LIKE GOD INTENDED I WILL POST MY RESULTS ASAP
Fry Jacks
It’s been a whirlwind five days in Belize, and I have lots to report, but I have to make a post entirely dedicated to the most delicious food I’ve tried yet: Fry Jacks. Imagine something like fried naan that’s all soft and puffy, and can be eaten alone, or stuffed like a stromboli. It is amazing. Fried but not saturated in oil, just the right balance of salty and sweet tilting towards the savory. Warm and flaky and all around fried wonderfulness. You can get these guys stuffed at a little shack called House of Fry Jacks in Caye Caulker for about $1.50 - $2 US, though here in San Ignacio, at a fancier restaurant called Eva’s, they ran me about $6 US. They are delicious and amazing and my new favorite of the flat breads. Boulder visitors take heed, I WILL be cooking these back stateside.
More to come soon about my non-gastronomical adventures, but I couldn’t not share this culinary treasure with y'all. If ever you’re in Belize or a Belizean restaurant, do not miss the fry jacks. OM NOM NOM.
Here are some photos from the honeymoon I took with my ma and brother to Belize. I learned that Belize was a hideout for British pirates who would attack the Spanish armada. The reef kept the giant Spanish boats away, which created this haven. Somehow, the British ended up with something like "squatter's rights" (which seems pretty farfetched, considering people were living where they "squatted," but who am I to nitpick?) which explains the ongoing, albeit very quiet, conflict between Guatamala and Belize over territory. (Where is Belize? Tucked east of Guatemala and below Mexico.) I think Belize might be the perfect place to take kiddos! I did a lot of real-world adventure park-style adventuring, like tubing down a mellow river while monkeys howled, cave spelunking to Mayan sacrificial sites, snorkeling with sting rays and little sharks, and eating fry bread aka fry jacks. My life is full of surprises!
