This is the best way to wake up, or to wake someone else up. Matcha stuffed french toast. It is beautiful, delicious, and easy to make. Feel free to mix up the fruit and put your own twist on it.
Start with some mascarpone cheese, add a tiny scoop of matcha (the expensive kind), a squeeze of lemon, splash of real vanilla, and stir until well incorporated. Next egg wash, crack two pasture raised eggs into a bowl, splash in your milk of choice, I used almond milk, another splash of vanilla, and then beat the eggs. Bread, very important, only 100% Authentic Brioche will do, whole foods usually has a lot of options, taste a piece by itself and you will understand why this is non negotiable. Cut up 2 slices per serving, spread the matcha mixture on a piece of bread and top it with the remaining piece. Carefully dip the bread into the egg mixture and let it soak up all that goodness. In a buttered nonstick pan, over medium heat, add your french toast and cook until golden brown.
For serving I suggest topping it with sesame seeds, strawberries, mint, and good quality honey. Enjoy
Who said oats have to be sweet? Breakfast is my favorite meal of the day, I could eat breakfast foods and nothing but for the rest of my life and be a happy girl. I don’t like having carbs in the mornings usually buuuut there are always exceptions.
This is super easy make as well.
What you need:
Oats (1/2 c per person)
Bacon (organic, grassed, no nitrates)
Edamame
1 Shallot
1 clove garlic
2 free range eggs per person (preferably organic)
Mushrooms (Hen of the Woods was in season so I used them)
Shredded cheese because...Cheese (I used a mix of cheddar and Moz)
Follow me:
Preheat oven to 400 degrees
I start with the mushrooms because they take the longest to cook. In a stainless steel pan, you can use cast iron as well. Add a tablespoon of Extra Virgin Olive Oil to a preheated pan (medium/medium-high heat). Toss in your mushrooms and let them start to brown up (about 4 minutes) add in your shallot and garlic and lower the heat to medium low. Cook for another 5 minutes and remove from heat. Salt and pepper to taste (I like Jacobs sea salt).
Once the oven is heated add a single layer of bacon to a baking sheet and cook for about 12 minutes depending on how crispy you like your bacon.
Start boiling some water in a kettle and scoop raw oats into each persons bowl.
Eggs (video coming soon) I like 2 eggs a person. I use a non stick sauce pot to make my scrambled eggs. Once its hot (medium high heat) add one tablespoon of butter (or Ghee if lactose intolerant). Crack eggs directly into the pot. With a silicon spatula starts scrambling the eggs and make sure you get the sides of the pot well. Add in a tablespoon of butter per person while they are still watery. Keep stirring and when the eggs look wet and almost done remove them from the heat. This shouldn’t be more than 2-3 minutes. Now you salt and pepper to taste. NEVER season before they are done, salt breaks down the protein the the eggs and gives you a less than pleasant texture. You want fluffy eggs? You wait.
By now your water should be yelling at you. Pour water into the bowls, just enough to cover the oats, let that hang out for two minutes and stir to make sure all the oats are wet. Salt and pepper.
Assembly time!
Make it fun, pretty food tastes better, it’s science. Add eggs, mushrooms, bacon, edamame. I topped mine off with cheese and Chalula.

Changing up the menu will put smiles on your family’s faces. But, pop tarts not your criteria for a healthy start of your kids breakfast? I agree, with one exception. A home-made version served with eggs, fruit/veggies and a tall glass of whole milk (for the lactose tolerant), could be the beginning of a smashing day for your kids, and for your hubby.
Homemade Pop Tarts (Adapted from Smitten Kitchen)
Pastry 2 cups (8 1/2 ounces) all-purpose flour 1 tablespoon sugar 1 teaspoon salt 1 cup (2 sticks or 8 ounces) cold, unsalted butter, diced 2 tablespoons (1 ounce) cold milk or ice water
1 egg (to brush on pastry)
Brown Sugar Cinnamon Filling (enough for 9 tarts) 1/2 cup (3 3/4 ounces) brown sugar 1 to 1 1/2 teaspoons ground cinnamon, to taste 4 teaspoons all-purpose flour

I agree there is way too much sugar in most breakfast treats and cereals. That doesn’t mean that your kids have to go completely without if your a health conscience mom, but want to spoil them on occasion. Home-made means you control the ingredients, as well as, the additives. Gluten free? No problem, just substitute where necessary.
They may not be Kellogg’s, but they are just as fun, likely tastier, and a bit healthier too. Give it a try.
