These Funfetti Cupcakes are a bright and fun treat that are great for parties and birthdays. Every bite is brightened up by the rainbow sprinkles.
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 2 teaspoons vanilla extract. 1 cup buttermilk. 1/2 cup rainbow sprinkles.
Instructions: Preheat your oven to 350F 175C and line a cupcake pan with paper liners. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. Gradually add the dry ingredients mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined. Fold in the rainbow sprinkles. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Once cooled, you can frost and decorate the cupcakes as desired.
