This vegan eggplant gyro is a delightful blend of smoky grilled eggplant, fresh vegetables, and aromatic herbs, all wrapped in a warm pita bread and drizzled with a creamy hummus sauce. It's a satisfying and flavorful plant-based meal that's perfect for lunch or dinner.
Ingredients: 2 large eggplants, sliced into rounds. 1 cup cherry tomatoes, halved. 1 red onion, thinly sliced. 1 cup shredded lettuce. 1/2 cup chopped fresh parsley. 1/4 cup chopped fresh mint. 1/4 cup olive oil. Salt and pepper to taste. 4 whole wheat pita bread. 1 cup hummus. 1/4 cup lemon juice. 2 cloves garlic, minced.
Instructions: Warm up the grill or grill pan over medium-low heat. Add salt and pepper to the eggplant slices after brushing them with olive oil. Grill slices of eggplant for three to four minutes on each side, or until they are soft and slightly charred. Put hummus, lemon juice, and minced garlic in a small bowl. This is how you make the sauce. Grill the pita bread for about one minute on each side to warm it up. Spread a lot of hummus sauce on each pita bread before putting the gyros together. On top of the hummus sauce, put grilled eggplant slices, cherry tomatoes, red onion, shredded lettuce, parsley, and mint. Fill the pita bread with food and fold it over to make a gyro. Serve right away and enjoy!
