Ingredients: 2 tbsp olive oil. 4 boneless, skinless chicken thighs, diced. 2 cloves garlic, minced. 1 small head cauliflower, grated into rice-like texture. 1 cup heavy cream. 1/2 cup grated Parmesan cheese. Salt and pepper to taste. Fresh parsley, chopped for garnish.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add diced chicken thighs and cook until browned and cooked through, about 5-7 minutes.
