These Beach Bum Cupcakes are the perfect way to celebrate summer! With a tropical twist featuring coconut, pineapple, and maraschino cherries, they'll transport you to the beach with every bite. The blue ocean-inspired frosting and fun decorations make them a hit at any summer gathering.

Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup milk. 1/2 cup shredded coconut. 1/4 cup crushed pineapple, drained. 1/4 cup maraschino cherries, chopped. For Frosting:. 1/2 cup unsalted butter, softened. 2 cups powdered sugar. 2-3 tbsp coconut milk. Blue food coloring. Decorative umbrella picks. Additional shredded coconut and cherries for garnish.

Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gradually mix in the dry ingredients, alternating with the milk, beginning and ending with the dry mixture. Fold in the shredded coconut, crushed pineapple, and chopped maraschino cherries. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for a few minutes before transferring them to a wire rack to cool completely. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and coconut milk, alternating between the two, until you reach your desired consistency. Tint the frosting with blue food coloring to resemble the beach and ocean. Frost the cooled cupcakes with the blue frosting, creating a wavy beach effect on top. Garnish with shredded coconut, maraschino cherries, and decorative umbrella picks to complete the beach bum look. Serve and enjoy your Beach Bum Cupcakes!

🥥 cove was soo much fun!!! We celebrated Evelyn’s Birthday 🎂 here for most of the day then we hit up Fort Lauderdale Beach once the water park closed. This outdoor park 🌴 has a lazy river, lap pool, water slides & a water playground. They close at 5 pm and it’s super affordable.
