"Vanakkam Singai" - is an amalgamation of indoor and outdoor segments within one programme to cater to general audience of multiple age groups. Making the transition from radio's weekday morning belt to television, "Vanakkam Singai" is a 1-hour Breakfast show that aims to kick start Sundays morning with a smile. The segments will comprise of quick breakfast demonstrations, lifestyle & wellness, light-hearted discussion topics that all households can relate to. Every episode will also feature cinema music videos to perk up the mornings of our viewers.
Local Shakshuka: Sardine Sambal Baked Eggs served with Flatbread
Many of us favour our grandma’s cooking. My most favourite meal cooked by my grandma is white steamed rice served with her signature tomato soup, sardine sambal and fried eggs on the side. Today’s breakfast is inspired by this meal; it consists of the three main ingredients - tomatoes, sardine sambal and eggs. I call it Local Shakshuka! Shakshuka is Mediterranean spicy baked egg dish. We are going to be using some of their flavours in this recipe too.
Variations: Replace sardine sambal with ikan bilis sambal, chicken sambal or just plain sambal gravy.
Ingredients:
2 tsp olive oil 1 clove garlic, minced 1 small red onion, diced ½ tsp salt ¼ tsp red pepper flakes 1 tsp ground cumin ½ tsp smoked paprika ⅓ cup crushed tomato 1 ½ cup leftover sardine sambal 2 large eggs ⅓ cup Feta cheese 2 tbsp fresh chinese parsley, chopped
Method:
Preheat oven to 180˚C.
Heat olive oil in an oven-safe skillet over medium heat.
Once the oil is hot, add the garlic, ½ of the onion red onion, salt, cumin, smoked paprika and red pepper flakes, and cook until the onion is softened.
Add the crushed tomatoes and sardine sambal stir, bringing the mixture to a simmer.
Crack the eggs directly into the sambal mixture, and transfer to the oven.
Bake until eggs are set, about 11 minutes.
Top with crumbled feta cheese and Chinese parsley.
Serve with warm flatbread. Enjoy!
