Bacon and egg fried rice
This Fathers' Day I made bacon and eggs in fried rice form. My dad would routinely eat bacon and eggs for dinner on Sunday nights, long before breakfast for dinner was the "thing" to do... I've combined it with the very first dish I remember cooking by myself - rice and peas - to make an excellent breakfast, lunch OR dinner.
Happy Fathers' Day to my dad, even though in Australia, where he lives, they celebrate in September.
