I was making rock cakes the other day when Melody asked if I could change the mixed fruit for chocolate & marshmallows. ⁣ So today I did just that. ⁣ Now I need a little advice. And the baking continues...😉 Banana, coconut and blueberry loaf. 5 x overripe bananas peeled and mashed 2 x eggs 70gm x raw sugar 100ml x almond milk 70gm x unsalted butter 250gm x wholemeal SR flour 1 x teaspoon no card soda 1.5 x teaspoon baking powder 1 x ping salt 1/2 x cup blueberries (I used frozen) 1/2 x cup shredded coconut In a large bowl combine all the wet ingredients except the blueberries and set aside. In another large bowl combine all the dry ingredients. Slowly pour the wet ingredients into the dry ingredients stirring well. In a lined baking loaf, pour half the batter then sprinkle some blueberries over and then cover with more batter. Once all the batter is poured into the loaf, sprinkle the remaining blueberries over the top. Bake in a preheated oven of 180 degrees for about 55 minutes. The Welshman nearly fell over in shock when he got home to find his wife barefoot and in the kitchen 😱😂 Attempting my first flourless chocolate cakes. Couldn't find my springform so I've made cupcakes. In my friand pan. Stuffed up my egg whites so not hopeful. They can always be covered in berries and ice cream.
